Melt chocolate and butter together. Let it cool slightly.

Whisk sugar and eggs until thick and pale, about 3 minutes. Fold in the chocolate mixture and vanilla.

Sift in flour, cocoa and salt. Fold gently — do not over-mix.

Pour into a lined 23cm tin. Bake at 180°C for 22-25 minutes. The centre should still wobble slightly. Cool completely before cutting.
