Cream butter and sugar until fluffy. Beat in eggs one at a time with a spoon of flour. Fold in remaining flour and vanilla.

Divide between two lined 20cm tins. Bake at 180°C for 22-25 minutes until golden and springy.

Cool completely. Spread one cake with jam and whipped cream. Sandwich together. Dust with icing sugar.
